Soup weather

I've tried several different recipes for lentil soup but I always return to my old recipe from one of Frances Moore Lappé's cookbooks. Simple and tasty - what more can you ask for.
I think "Diet for a Small Planet" was published in 1971, at that time you were rather obsessed with proteins and the first half of the book deals with how to combine food to get all protein you need. But there are some good recipes and I have a few that I use quite often.



My darling who doesn't enjoy soup is not so happy with the winter weather. He has started to use the indoor facilities and complains a lot about the cold weather. Watching birds from the window seat is not as much fun as hunting so after a while he goes back to sleep.

Can't go out yet

It has been raining most of the day in real life too. My darling was a bit upset about it and required that I turn it off. When I refused — as we need the rain — he decided to spend the day sleeping, in my lap with my laptop as his pillow.

The picture isn't very good as I had to use my left hand to take the photo. It also makes it rather hard to write when parts of the key-board is occupied.




Spent some time in the morning making the White Berry Pie from Allrecipe (http://allrecipes.com/Recipe/White-Berry-Pie/Detail.aspx). I'll use raspberries for the topping, berries I'll pick tomorrow just before I'll serve the pie — and hope it won't rain too hard.

So far I've managed to pick about 2 l cherries and I doubt that I can get much more without breaking my neck. I listened to the radio and the rain while I pitted them — now I need to decide what to do with them....

almond-rhubarb-cheesecake-squares


My darling woke me up at 6:30 when he wanted to come in and share my pillow. I like mornings but I'm not a morning person — but today I couldn't go back to sleep so I left the bed — and my darling — and went out to harvest some rhubarb before it gets woody.

This is what I came up with — almond-rhubarb-cheesecake-squares.
We're such a small household that I need to freeze most things I bake and cook. I've found that you can freeze almost everything — even if the recipe tells you that you can't! As bars are so much easier to put in boxes and freeze, and only thaw one or two at a time, I seldom make pies or round cakes. That's the reason I made this pie in a 20 x 30 cm pan.





Make a pie dough and line a pie plate or other pan with it.

Beat
200 g cream cheese
with
½ cup raw sugar
1 cup ground almond
1 egg

stir in

3 cups rhubarb

pour the mixture in the pie crust and sprinkle with

½ cup chopped almonds
3 tblsp muscovado sugar

Bake at 200°C for 10 minutes. continue baking at 175°C for about 30 minutes.
